What's for Dinner? Slow Cooker Pulled Pork

Slow Cooker Pulled Pork (from Katie Guymon) Serves 8  Ingredients -2 lb. pork tenderloin or pork roast -Salt -Pepper -Garlic salt -1 can or bottle root beer or cola, 12 fluid ounce -1 bottle of your favorite BBQ sauce, 18 ounce -8 hamburger buns Directions 1.  Place pork tenderloin or roast in slow cooker. 2.  Season meat with salt, pepper and garlic salt. 3.  Pour root beer or cola over the meat. 4.  Cover and cook on low until pork shreds easily, 8 to 10 hours. 5.  Drain well. 6.  Stir in BBQ sauce. 7.  Serve on hamburger buns. Serving Suggestions We are having our pulled pork sandwiches with corn, macaroni and cheese (in the freezer from Thanksgiving) and corn muffins.  YUM!

Sunday, December 11 Beef Fajitas (from justgetoffyourbuttandbake.com) Serves 4 Ingredients -1 green bell pepper, cut into strips -1 red bell pepper, cut into strips -1 yellow pepper, cut into strips -1 onion, cut into strips -1 pound boneless beef sirloin steak, cut into strips -3/4 cup beef broth -2 tablespoons red wine vinegar -1 tablespoon lime juice -2 teaspoon ground cumin -2 teaspoon chili powder -1/2 teaspoon salt -1 teaspoon garlic powder -1/2 teaspoon pepper -1/4 teaspoon cayenne pepper Directions 1.  Place peppers and onions in slow cooker. 2.  Add beef strips. 3.  Add beef broth, vinegar, lime juice and seasonings.  Stir to coat. 4.  Cover and cook on low for 8-10 hours. Serving Suggestions Serve on flour tortillas with salsa, shredded cheese, sour cream and guacamole. Would be great with a side dish of black beans and rice. Meat 3 pounds beef sirloin* 1 pound cubed beef stew meat 2 boneless, skinless chicken breasts *London broil is on sale this week at Giant (our local grocery store), so I'll be using that for the fajitas and pepper steak.  It's a little tougher, but hopefully the slow cooker will tenderize it.   Produce 2 green bell pepper 2 red bell pepper 1 yellow pepper 4 onions Refrigerated Items 4 oz. sour cream Canned Goods 3 cans beef broth 2 cans condensed golden mushroom soup (10.75 ounces) 2 cans chopped green chile peppers (4 ounce) 1 can chicken broth (14.5 ounce) 3 cans white beans (15 ounce) 1 can black beans (15 ounce) 1 can whole kernel corn 1 can stewed tomatoes (14.5 ounces) Spices/Condiments/Sauces red wine vinegar lime juice ground cumin chili powder salt garlic powder pepper cayenne pepper Worcestershire sauce minced garlic vegetable oil soy sauce sugar cornstarch Bread/Noodles tortillas egg noodles

What's for Dinner? Slow Cooker Brisket

Full disclosure: I have not made this before and my grocery store did not have a brisket so I am making it with a chuck roast.  I am hoping it is still delicious! Brisket (from onceamonthmom.com) Serves 4-6 Ingredients -2.5 pounds Beef Brisket -12 ounces beer -3/4 cup pickles, chopped -1 tablespoon Worcestershire sauce -3/4 cup brown sugar -12 ounces chili sauce -1 teaspoon pepper -1 teaspoon salt -1 onion, sliced Directions 1.  Mix beer, pickles, Worcestershire sauce, brown sugar, chili sauce together in slow cooker. 2.  Add onions to slow cooker. 3.  Salt and pepper the brisket, to taste. 4.  Add brisket to slow cooker. 5.  Cook on low for 8-10 hours, or high 4-5 hours. 6.  Either shred with a fork or slice. Serving Suggestions We are having our brisket with mashed potatoes and corn.  I suspect it would be delicious with coleslaw, potato salad, baked beans or even roasted potatoes.  

What's for Dinner? Slow Cooker Baby Back Ribs

I have never been a big fan of ribs.  To be quite honest, I hate eating meat off the bone.  It grosses me out.  But, my husband loves ribs and I also realize that we have to eat more than just chicken.  So, when I found this recipe I had to try it.  One word...AMAZING!  The meat literally fell off the bone it was so tender.  Try it, you won't be disappointed. Slow Cooker Baby Back Ribs  (from allrecipes.com) Serves 8 Ingredients -4 lbs baby back ribs -salt and pepper to taste -2 cups ketchup (or BBQ sauce) -1 cup chili sauce -1/2 cup packed brown sugar -4 tablespoons red wine vinegar -2 teaspoons dried oregano -2 teaspoons Worcestershire sauce Directions 1.  Preheat oven to 400 degrees. 2.  Season ribs with salt and pepper.  Place ribs on a cookie sheet. 3.  Brown in oven for 15 minutes.  Flip and brown another 15 minutes. 4.  Meanwhile, in a medium bowl, mix together ketchup, chili sauce, brown sugar, vinegar, oregano, Worcestershire sauce. 5.  Place ribs in sl
