What's for Dinner? Slow Cooker Pulled Pork

Slow Cooker Pulled Pork (from Katie Guymon)
Serves 8 

-2 lb. pork tenderloin or pork roast
-Garlic salt
-1 can or bottle root beer or cola, 12 fluid ounce
-1 bottle of your favorite BBQ sauce, 18 ounce
-8 hamburger buns

1.  Place pork tenderloin or roast in slow cooker.
2.  Season meat with salt, pepper and garlic salt.
3.  Pour root beer or cola over the meat.
4.  Cover and cook on low until pork shreds easily, 8 to 10 hours.
5.  Drain well.
6.  Stir in BBQ sauce.
7.  Serve on hamburger buns.

Serving Suggestions
We are having our pulled pork sandwiches with corn, macaroni and cheese (in the freezer from Thanksgiving) and corn muffins.  YUM!

Weekly Menu: 12/11/11-12/17/11

Sunday, December 11

Beef Fajitas (from
Serves 4

-1 green bell pepper, cut into strips
-1 red bell pepper, cut into strips
-1 yellow pepper, cut into strips
-1 onion, cut into strips
-1 pound boneless beef sirloin steak, cut into strips
-3/4 cup beef broth
-2 tablespoons red wine vinegar
-1 tablespoon lime juice
-2 teaspoon ground cumin
-2 teaspoon chili powder
-1/2 teaspoon salt
-1 teaspoon garlic powder
-1/2 teaspoon pepper
-1/4 teaspoon cayenne pepper

1.  Place peppers and onions in slow cooker.
2.  Add beef strips.
3.  Add beef broth, vinegar, lime juice and seasonings.  Stir to coat.
4.  Cover and cook on low for 8-10 hours.

Serving Suggestions
Serve on flour tortillas with salsa, shredded cheese, sour cream and guacamole.
Would be great with a side dish of black beans and rice.

Beef Stroganoff (from
Serves 4

-1 pound cubed beef stew meat
-2 can condensed golden mushroom soup (10.75 ounces)
-1 cup chopped onion
-1 tablespoon Worcestershire sauce
-1/2 cup beef broth
-4 ounces sour cream
-salt and pepper to taste
-1 teaspoon minced garlic
-1 package egg noodles

1.  In slow cooker, combine meat, soup, onion, Worcestershire sauce, beef broth, minced garlic and salt and pepper.
2.  Cook on low for 8-10 hours.
3.  Add sour cream just before serving.

Serving Suggestions
Serve over egg noodles.

White Chicken Chili (adapted from
Serves 4

-1 onion, chopped
-1 1/2 teaspoons minced garlic
-2 cans chopped green chile peppers (4 ounce)
-4 teaspoons ground cumin
-1/2 teaspoon ground cayenne pepper
-1 can chicken broth (14.5 ounce)
-2 boneless, skinless chicken breasts
-3 cans white beans (15 ounce), rinsed and drained
-1 can black beans (15 ounce), rinsed and drained
-1 can whole kernel corn, drained

1.  In slow cooker, mix together onion, garlic, green chile peppers, cumin, cayenne pepper, chicken broth, white beans, black beans and corn.  If you like your chili a little thicker, puree one of the cans of white beans first.
2.  Add chicken breasts
3.  Cook on low for 8-10 hours.
4.  Before serving, shred the chicken and stir.

Serving Suggestions
Serve with shredded Monterey Jack cheese, sour cream and tortilla strips.

Slow Cooker Pepper Steak (from
Serves 6

-2 pound beef sirloin, cut into 2 inch strips
-garlic powder to taste
-3 tablespoons vegetable oil
-1/4 cups beef broth
-1/2 cup chopped onion
-1 large green bell pepper, cut into strips
-1 large red bell pepper, cut into strips
-1 can stewed tomatoes, with liquid (14.5 ounces)
-3 tablespoons soy sauce
-1 teaspoon white sugar
-1 teaspoon salt
-1 tablespoon cornstarch

1.  Sprinkle sirloin with garlic powder.
2.  In a large skillet over medium heat, heat the vegetable oil and brown the seasoned beef strips.
3.  Transfer to slow cooker.
4.  Pour beef broth into slow cooker.
5.  Stir in onion, green peppers, stewed tomatoes, soy sauce, sugar and salt.
6.  Cover and cook on low for 8-10 hours.
7.  Towards the end, add cornstarch to thicken up the sauce.

Serving Suggestions
Serve with rice.

*London broil is on sale this week at Giant (our local grocery store), so I'll be using that for the fajitas and pepper steak.  It's a little tougher, but hopefully the slow cooker will tenderize it.

What's for Dinner? Slow Cooker Brisket

Full disclosure: I have not made this before and my grocery store did not have a brisket so I am making it with a chuck roast.  I am hoping it is still delicious!

Brisket (from
Serves 4-6

-2.5 pounds Beef Brisket
-12 ounces beer
-3/4 cup pickles, chopped
-1 tablespoon Worcestershire sauce
-3/4 cup brown sugar
-12 ounces chili sauce
-1 teaspoon pepper
-1 teaspoon salt
-1 onion, sliced

1.  Mix beer, pickles, Worcestershire sauce, brown sugar, chili sauce together in slow cooker.
2.  Add onions to slow cooker.
3.  Salt and pepper the brisket, to taste.
4.  Add brisket to slow cooker.
5.  Cook on low for 8-10 hours, or high 4-5 hours.
6.  Either shred with a fork or slice.

Serving Suggestions
We are having our brisket with mashed potatoes and corn.  I suspect it would be delicious with coleslaw, potato salad, baked beans or even roasted potatoes.

What's for Dinner? Slow Cooker Baby Back Ribs

I have never been a big fan of ribs.  To be quite honest, I hate eating meat off the bone.  It grosses me out.  But, my husband loves ribs and I also realize that we have to eat more than just chicken.  So, when I found this recipe I had to try it.  One word...AMAZING!  The meat literally fell off the bone it was so tender.  Try it, you won't be disappointed.

Slow Cooker Baby Back Ribs (from
Serves 8

-4 lbs baby back ribs
-salt and pepper to taste
-2 cups ketchup (or BBQ sauce)
-1 cup chili sauce
-1/2 cup packed brown sugar
-4 tablespoons red wine vinegar
-2 teaspoons dried oregano
-2 teaspoons Worcestershire sauce

1.  Preheat oven to 400 degrees.
2.  Season ribs with salt and pepper.  Place ribs on a cookie sheet.
3.  Brown in oven for 15 minutes.  Flip and brown another 15 minutes.
4.  Meanwhile, in a medium bowl, mix together ketchup, chili sauce, brown sugar, vinegar, oregano, Worcestershire sauce.
5.  Place ribs in slow cooker.
6.  Pour sauce over ribs and turn to coat.
7.  Cover and cook on low for 8-10 hours.

Serving Suggestions
Serve with rice pilaf and corn.
