Slow Cooker Herbed Lemon Chicken

This is one my favorite, weeknight, go to recipes.  I've had it in my recipe collection since the first time I joined Weight Watchers in 2003.  It is delicious, I highly recommend you try it.  I adapted it for the slow cooker.

Herbed Lemon Chicken Breasts (from Weight Watchers*)
Serves 4

--4 Tbsp. Mrs. Dash Lemon Pepper seasoning
--2 Tbsp. all-purpose flour
--4 boneless, skinless chicken breasts
--1 Tbsp. unsalted butter
--1/2 medium fresh lemon or 2-3 tablespoons lemon juice
--1 cup chicken broth

1.  On a large plate, combine Mrs. Dash Lemon Pepper seasoning with flour.
2.  Pat chicken dry and roll in flour mixture.
3.  Heat butter over medium heat in a large skillet; add chicken and brown for 3 minutes on each side.
4.  Meanwhile, remove zest from lemon; squeeze juice from lemon and mix zest and juice with chicken broth.
5.  Pour liquid mixture into slow cooker.
6.  Add chicken to slow cooker.
7.  Cover and cook on low for 8 hours (or less).

Serving Suggestions
I love to serve this healthy chicken with roasted red potatoes and either roasted asparagus or roasted/steamed broccoli.  

*These are 3 points from the old Weight Watchers point calculations...not sure what the points would be today.

Slow Cooker Parmesan Honey Pork Roast

--1 boneless pork roast
--2/3 cup Parmesan cheese
--1/2 cup honey
--3 tablespoons soy sauce
--2 tablespoon dried basil
--2 tablespoon minced garlic
--2 tablespoon olive oil
--1/2 teaspoon salt
--2 tablespoons cornstarch
--1/4 cup cold water

1.  Spray slow cooker with non-stick cooking spray.
2.  Place roast in slow cooker.
3.  In a small bowl, combine Parmesan, honey, soy sauce, basil, garlic, olive oil and salt.
4.  Add to slow cooker.
5.  Cover and cook for 8-10 hours or until cooked through.
6.  Remove meat and keep warm.
7.  Skim fat from cooking juices.
8. Transfer cooking juices to small saucepan and bring to a boil.
9.  Combine cornstarch and water until smooth.
10. Gradually stir into saucepan.
11. Bring to a boil and cook until thickened, about 2 minutes.
12. Slice roast and serve with gravy.

Serves 4

--4 boneless, skinless chicken breasts or thighs
--Salt and pepper to taste
--1 cup honey
--1/2 cup soy sauce
--1/2 cup diced onion or 1tbsp onion powder
--1/4 cup ketchup
--2 tablespoons vegetable oil, olive oil or canola oil
--2 cloves garlic, minced
--4 teaspoons cornstarch dissolved in 6 tablespoons water
--Sesame seeds

1.  Lightly season chicken with salt and pepper and add to the slow cooker.
2.  In a small bowl, combine honey, soy sauce, onion, ketchup, oil and garlic.
3.  Pour over chicken.
4.  Cook on low for 8-10 hours or until chicken is cooked through.
5.  Remove chicken from slow cooker and cut into bite size pieces.
6.  Dissolve 4 teaspoons of cornstarch in 6 tablespoons of water and add to slow cooker.
7.  Stir to combine.
8.  Add chicken back to slow cooker, sprinkle with sesame seeds and replace lid and cook on high for 10 minutes or until sauce slightly thickens.

Serving Suggestions
Serve over brown or white rice with your favorite stir fried vegetables or steamed broccoli.

What's for Dinner? Slow Cooker Chicken Parmesan

Serves 4

--4 boneless, skinless chicken breasts
--1 tablespoon olive oil
--1 egg
--1/2 cup Italian seasoned breadcrumbs
--1/4 cup freshly grated Parmesan cheese
--1/4 teaspoon pepper
--1/4 teaspoon salt
--1 cup shredded mozzarella cheese
--1 jar of your favorite pasta sauce*

*I used Classico Tomato & Basil

1.  Spread olive oil on the bottom of slow cooker.
2.  Beat egg in a bowl.
3.  In a separate bowl, or plate, mix together breadcrumbs, Parmesan cheese, pepper and salt.
4.  Dip each chicken breast in egg then breadcrumb mixture.
5.  Add chicken breasts to slow cooker.
6.  Cover chicken with 1 cup of mozzarella cheese.
7.  Cover chicken and cheese with pasta sauce.
8.  Cook on low for 8-10 hours.

Serving Suggestions
Serve over your favorite noodle with garlic bread and a big salad.

Super Bowl Sunday: Balsamic Honey Pulled Pork Sliders

To be quite honest, I could care less about the Super Bowl this year.  I haven't cared about a Super Bowl since the Bears played the Colts in 2006 - thanks for nothing Rex Grossman.  Regardless, the Super Bowl is really about funny commercials, subpar halftime shows (sorry Madonna, it was awkward) and food.  I tried this new recipe below and it was awesome.

Balsamic Honey Pulled Pork Sliders (from Better Homes and Gardens)
Makes 12 mini sliders

--1.5 pound boneless pork shoulder roast*
--1 medium onion, chopped
--1/2 cup green pepper, chopped
--1/2 teaspoon dried thyme, crushed
--1/4 teaspoon dried rosemary, crushed
--1/2 cup chicken broth
--1 cup balsamic vinegar
--3/4 cup ketchup
--1/3 cup packed brown sugar
--1/4 cup honey
--1 tablespoon Worcestershire sauce
--1 tablespoon Dijon mustard
--1 clove garlic, minced
--1/2 teaspoon ground black pepper
--1/4 teaspoon salt
--12 dinner rolls or mini hamburger buns, split and toasted

*I never have luck with pork shoulder roast, so I used a pork tenderloin which I had in the freezer.

1.  Trim fat from meat and, if necessary, cut meat to fit in slow cooker.
2.  In slow cooker, combine onion and green pepper.
3.  Add meat; sprinkle with thyme and rosemary.
4.  Pour chicken broth over meat.
5.  Cook on low for 8-10 hours.
6.  For barbecue sauce, in a medium bowl combine vinegar, ketchup, brown sugar, honey, Worcestershire sauce, Dijon mustard, pepper and salt.
7.  Cover and refrigerate.
8.  When meat is cooked, simmer the sauce, uncovered, in a medium saucepan for 20-25 mins or until sauce slightly thickens.
9.  Remove meat from slow cooker and shred, discarding any remaining fat.
10.  Strain onion and peppers, discarding liquid.
11  Return onion, peppers and meat to slow cooker.
12.  Stir in barbecue sauce, cover and cook until heated through.

Serving Suggestions
I served mine on potato rolls topped with homemade coleslaw and diced dill pickles with cornbread on the side.
