Top 10 Slow Cooker Recipes of 2012

Thank you for following my blog in 2012.  Everywhere I go, people tell me they want to start using their slow cooker more...but the truth is, they aren't!  The goal of this blog has always been to help other people put dinner on the table.  So, for those of you out there who still haven't started menu planning, following this blog or using your slow cooker...below are Momma Aimone's top 10 slow cooker recipes of 2012.  Start slow, try one of these a week for the next 10 weeks.  You'll be happy you did!

Slow Cooker Beef Fajitas


Ingredients
-1 green bell pepper, cut into strips
-1 red bell pepper, cut into strips
-1 yellow pepper, cut into strips
-1 onion, cut into strips
-1 pound boneless beef sirloin steak, cut into strips
-3/4 cup beef broth
-2 tablespoons red wine vinegar
-1 tablespoon lime juice
-2 teaspoon ground cumin
-2 teaspoon chili powder
-1/2 teaspoon salt
-1 teaspoon garlic powder
-1/2 teaspoon pepper
-1/4 teaspoon cayenne pepper

Directions
1.  Place peppers and onions in slow cooker.
2.  Add beef strips.
3.  Add beef broth, vinegar, lime juice and seasonings.  Stir to coat.
4.  Cover and cook on low for 8-10 hours.

Serving Suggestions
Serve on flour tortillas with salsa, shredded cheese, sour cream and guacamole.
Would be great with a side dish of black beans and rice.

Slow Cooker Pot Roast

Ingredients
-2.5 lbs boneless bottom round roast
-1/2 teaspoon black pepper
-1/4 teaspoon salt
-2 large onions (sliced)
-1 3/4 cups water or beef broth
-1 1/2 tablespoons balsamic or red-wine vinegar
-1 envelope dry onion soup mix
-1 tsp dried thyme
-1 3/4 lbs red potatoes (quartered)
-1 pound baby carrots

Directions
1.  Sprinkle the roast with pepper and salt; add to the slow cooker.
2.  Add the onions, carrots and potatoes.
3.  Mix together the remaining ingredients and add to the slow cooker.
4.  Cook on low for 8-10 hours.

Slow Cooker Pulled Pork Tacos

Ingredients
2 1/2 pound pork roast
1 jar of salsa (16 ounces)
2 tablespoons chili powder
2 tablespoons dried oregano
2 tablespoons cocoa powder
1 teaspoon salt

Directions
--In slow cooker, combine the salsa, chili powder, oregano, cocoa, and 1 teaspoon salt. 
--Add the pork and turn to coat.
--Cook on low for 8-10 hours.
--Just before serving, shred the pork and stir into the cooking liquid.

Serving Suggestions
--Serve with the tortillas, shredded monterey jack cheese, sour cream and extra salsa.
--A black bean and corn salsa would be delicious on the side!

Weekly Menu: Monday, December 17 - Thursday, December 20

This is my last post before Christmas.  It is hard for me to believe that Christmas is just around the corner.  Where did this year go?  I don't know about you, but after the senseless killings in Connecticut last week, I am actually going to take the time to enjoy this holiday season.  I am going to soak in every minute I get to spend with family and friends.  I am going to watch White Christmas, It's a Wonderful Life, Christmas Vacation and How the Grinch Stole Christmas as many times as I can.  I am not going to worry if my presents are perfectly wrapped, or if everything goes according to plan.   If we have learned anything this year, life is too short and too precious to waste one minute of it.  So, I am going to tell my family I love them, spend some quality time with my husband and snuggle my lil' boy every chance I get.

Slow Cooker Cajun Chicken

Cajun Chicken (from Crock Pot girls)
Ingredients
-2 lbs chicken breasts
-Creole seasoning
-1 Corona
-1 onion
-2 tsps lime juice

Directions
-Place chicken breast in slow cooker.
-Sprinkle chicken with enough creole seasoning to cover.
-Add Corona, lime juice and onion.
-Cook on low 8-10 hours.

Serving Suggestions
-Serve with roasted potatoes and corn.

Slow Cooker Chicken with Garlic


Slow Cooker Chicken with Garlic 
Ingredients
1 whole chicken
20 unpeeled garlic cloves
4 teaspoons olive oil
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon dried sage
1 teaspoon salt
1/4 teaspoon pepper


Directions
--Rub the chicken with olive.
--Sprinkle with rosemary, thyme, sage, salt and pepper.
--Add chicken to slow cooker
--Cook on low for 8-10 hours.


Serving Suggestions
--Serve with roasted red potatoes and your favorite roasted vegetables.
--The garlic cloves will soften and sweeten as they cook.  Squeeze the garlic and spread it on crusty French Bread for fantastic flavor!
