I stumbled upon this recipe awhile back, and it quickly became a staple in my weekly meal planning. We all know how much Momma Aimone loves a good sheet pan recipe, mainly because there is so little clean up after - and this one does not disappoint. I hope you enjoy!</i></span></p><p><br /></p><p><b><u>Sheet Pan Fajitas</u></b></p><p><i>Adapted from <a href="https://www.cookingclassy.com/sheet-pan-chicken-fajitas/">cookingclassy.com</a></i></p><p><i>Serves 8</i></p><p><br /></p><p><b>Ingredients</b></p><p>2 lbs boneless, skinless chicken breasts or tenders (sliced into strips)</p><p>1 each red, orange, and yellow peppers (sliced into strips)</p><p>1 red onion (sliced into strips)</p><p>2 cloves garlic (minced)</p><p>3 Tbsp olive oil</p><p>2 tsp chili powder</p><p>1 1/2 tsp cumin</p><p>1 tsp paprika</p><p>1/2 tsp coriander</p><p>Salt and pepper to taste</p><p><b><br /></b></p><p><b>Directions</b></p><p>1. Preheat oven to 400 degrees.</p><p>2. Spray a large baking sheet with non-stick cooking spray.</p><p>3. Spread chicken, peppers, and onion on the baking sheet. </p><p>4. How social media is making us all crazy. How I thought I could "do it all" when I had kids. How my house will never, ever, ever be neat and tidy, no matter how hard I try. How no matter how many lists I write, and how many things I check off those lists, I am still a hot mess. How I always feel like I am failing, at everything. How I dream about the things I need to do both at home and at work. How I will never be the mom, wife, daughter, employee (fill in a million other things) that I strive to be.</i><br />

<i>At the same time I've been thinking all these things, I've also been reading a lot of articles about how we as a society put so much pressure on ourselves, that we forget to live in the moment and just enjoy life. And that everything doesn't have to be perfect, or extraordinary. Sometimes "good enough" is just that...enough. I'm not perfect - I promise you that. And while I may not be perfect, I am lucky. I have amazing family and friends, a husband who puts up with my crazy, two beautiful and healthy children, a roof over my head, food in my cabinets, running water, etc. </i><br />

<i>So shame on me. While I've been sitting around complaining about all that I don't have, or how busy I am, or how stressed I am, there are others who are praying and hoping for the very things I often find myself complaining about. So, shame on me. It's time for me to start looking at my life as half full, not half empty. And it's also time for me to realize that sometimes "good enough" is just that...enough. </i><br />

When I went to the grocery store, I couldn't find green enchilada sauce so I substituted regular enchilada sauce. And the original recipe called for too much cheese for our liking. Here is the recipe I made, it was delicious!</i><br />
<i><br /></i>
<b>Ingredients</b><br />
1/3 cup honey<br />
1/4 cup lime juice<br />
1/2 teaspoon chili powder<br />
1/2 teaspoon garlic powder<br />
1 lb. chicken (cooked and shredded)<br />
8 soft taco tortillas<br />
2 cups Monterey Jack cheese, shredded<br />
2 cups enchilada sauce<br />
1/2 cup heavy cream<br />
<br />
<b>Instructions</b><br />
1. Preheat oven to 350 degrees.<br />
2. Mix the honey, lime juice, chili powder and garlic powder in a Ziploc bag.<br />
3. Add the shredded chicken.<br />
4. Marinate for at least 1/2 hour. (I marinated the chicken while I was at work)<br />
5. Spray a large pan with cooking spray.<br />
6. Cover the bottom of the pan with a thin layer of enchilada sauce.<br />
7. Fill each tortilla with shredded chicken and shredded cheese, roll and add to pan.<br />
8. Mix the remaining enchilada sauce with the heavy cream.<br />
9. Pour the sauce over the enchiladas.<br />
10. Sprinkle remaining cheese over enchiladas.<br />
11. Bake at 350 degrees for 30 minutes.<br />

<i>I have been making this recipe since I joined Weight Watchers in 2003. I love, love, love, love this recipe.</i><br />
<i><br /></i>
<b>Ingredients</b><br />
2 tablespoons Mrs. Dash Lemon Pepper<br />
1 tablespoon flour<br />
4 boneless, skinless chicken breasts<br />
1 tablespoon butter<br />
1/2 medium fresh lemon (and zest)<br />
1 cup chicken broth<br />
<br />
<b>Directions</b><br />
1. On a large plate, combine Mrs. Dash Lemon Pepper seasoning with flour.<br />
2. Pat the chicken dry and roll in flour mixture.<br />
3. Melt the butter in a large skillet.<br />
4. Add chicken and brown on both sides, about 3 minutes each.<br />
5. Remove zest from lemon, and combine with juice from lemon and the chicken broth.<br />
6. Pour broth mixture over chicken, cover and cook for 15 minutes.<br />
7. Remove lid and cook for another 5 minutes or until juices run clear.<br />

Last week, I was pretty much run over by life. And nothing went according to plan, but you know what? We survived. We may not have had a home cooked meal on the table every night, but we are still here. </i><br />

<i>I do wish, though, that my 2014 self had listened to my 2011 self when I said "No big life changes next time you have a baby!" Did I listen? Of course not. Instead, I start a new job and we decide to renovate our basement. Now, these are both really good decisions, just additional stresses when you are adjusting to having two kids instead of one. I forgot how hard it is to have a baby, event when your baby is a rockstar and sleeps through the night. It is still hard.</i><br />

<i>The other thing that is throwing me off, is that with this renovation, I can't use my slow cooker because you never know when the power is going to get turned off. This is hard for me, because as we all know...I LOVE MY SLOW COOKER. But we will survive. I know we will!</i><br />

At first I was embarrassed, but to be honest...2013 was tough. March and April were busy, our home was burglarized in May, our son turned two and I had my first gallbladder attack the night before his birthday party in June, I had my gallbladder removed in August, we went on our first family vacation a few weeks later. I had fully intended on jumping back into the blog-osphere in September, but then we found out we were pregnant with Baby #2, I was in the middle of a super intense time at work and...a really great company began recruiting me for a new job. </i><br />
<i><br /></i>
<i>So now it is mid-February 2014. I am 28 weeks pregnant, and I started my new job less than 30 days ago. Am I insane? Probably. Is anyone surprised? Probably not.</i><br />

<i>But I have made myself a promise, that I will do my best to be the best wife, mother, daughter, sister, friend and employee I can be. I will not try to to live up to expectations of others, instead, I will follow my heart and do the best I can. That means staying organized and getting back to menu-planning. I read somewhere that one of the top 10 daily habits for Moms is meal-planning, and I could not agree more. I feel like life is less hectic, less stressful and I just feel better when I know what we will be eating each week.</i><br />

<i>Note: These were awesome. I tweaked the recipe just a bit though. Instead of using one can of diced tomatoes, I used two cans of Rotel. I also used a bag of rainbow or stoplight peppers instead of just one large green bell pepper., and I mixed the spices with the Rotel before pouring over the chicken, peppers and onion. This would be a great meal to prepare ahead of time and throw in the freezer.</i><br />

Well, it is no secret that I love to craft, I love my girlfriends, and I love wine...hence craft club. We tried book club, but no one read the book and it just turned into a wine drinking, gossip fest (which I was A-OK with) but ever since having my Sweet Boy, I feel like I have to be constantly "doing" something. So, craft club was born. All the same benefits of book club, but you leave with a finished product. GENIUS. Each lady takes turn hosting once a year and is responsible for the craft, food and beverages. I highly suggest replicating, and doubling, this menu for your next ladies only function!</i><br />

-8 ounce package of cream cheese, softened<br />
-3 cups sugar<br />
-6 large eggs<br />
-3 cups flour<br />
-Dash of salt<br />
-1 tablespoon vanilla extract<br />

<b>Directions</b><br />
1. Beat butter and cream cheese together at medium speed until creamy (do not over beat).<br />
2. Gradually add sugar.<br />
3. Add eggs, one at a time, beating until combined.<br />
4. Combine flour and salt in a separate bowl and gradually add to butter mixture.<br />
5. Stir in vanilla.<br />
6. Pour batter into a greased and floured bundt pan.<br />
7. Even the top of the cake out with a spatula.<br />
8. Bake at 300 for 1 hour and 40 minutes, or until toothpick comes out clean.<br />
9. Cool in pan on wire rack for 15-20 mins, then remove from pan and let cool on wire rack completely.<br />

1. In a large bowl, combine the flour, baking soda, baking powder and salt.<br />
2. In a separate bowl, mix the butter and peanut butter together with an electric mixer.<br />
3. Add the brown sugar and granulated sugar and beat until smooth.<br />
4. Beat in the eggs, honey, vanilla and sour cream until combined.<br />
5. Add the dry ingredients slowly and beat on low-speed until combined.<br />
6. Gently stir in the chocolate chips<br />
7. Chill dough in the freezer for 20 mins.<br />
8. Roll the dough into 24 one inch balls and place onto ungreased cookie sheets.<br />
9. Bake in a 350 degree oven for 9-12 minutes, or until cookies begin to turn a golden brown and crisp up around the edges.<br />
10. Remove from the oven and let cool on cookie sheets for 3-5 minutes.<br />
11. Sprinkle cookies generously with sea salt.<br />

--1 teaspoon baking soda<br />
--1 teaspoon sea salt<br />
--2 sticks butter, room temp<br />
--3/4 cup brown sugar<br />
--3/4 cup white sugar<br />
--2 eggs<br />
--1 tsp vanilla<br />
--1 1/2 cups coarsely chopped pretzels<br />
--1 (8 oz) bag of Reese's Mini cups<br />
--1 (14 oz) bag of caramels, unwrapped<br />
--2 tbsp water<br />
--2 cups semi sweet chocolate chips<br />
<br />
<b>Directions</b><br />
<b>1. </b>Preheat oven to 375<br />
2. Spray a 9x13 pan lightly with cooking spray<br />
3. Combine flour, baking soda and salt in small bowl.<br />
4. Beat butter, granulated sugar, brown sugar and vanilla extract in a large mixer bowl unti creamy.<br />
5. Add eggs one at a time, beating well after each addition.<br />
6. Gradually beat in flour mixture.<br />
7. Slowly add in Reese's and pretzels, mixing until evenly distributed. (<i>Next time I'll add 2 cups chocolate chips)</i><br />
8. Spread into prepared pan.<br />
9. Bake for 20 to 25 minutes or until golden brown.<br />
10. Let cool completely.<br />
11. When cooled, melt your caramels and 2 tbsp water in a microwave safe bowl stirring every minute until melted.<br />
12. Pour melted caramel over bars.<br />
13. Chill in fridge for 15 minutes.<br />
14. Melt your chocolate chips in microwave and spread over caramel. <i>(Next time I'll do 1 cup peanut butter chips and 1 cups chocolate chips)</i><br />
15. Chill in fridge for at least 30 minutes or until chocolate is set.<br />
16. 2. Place chicken breasts in slow cooker.<br />
3. Add green pepper, onion, broth and dressing mix to slow cooker.<br />
4. Cover and cook on low for 8-10 hours.<br />
5. Remove chicken breasts from slow cooker and shred.<br />
6. Put shredded chicken back into the slow cooker and mix well.<br />
7. <b><u>Cake Batter Rice Krispy Treats</u></b><br />

<b>Ingredients</b><br />
--3 Tbsp. butter<br />
-- 10 oz. bag of mini-marshmallows<br />
-- 1/2 cup dry yellow cake mix<br />
-- 5 cups rice cereal<br />
-- 1.75 oz container of sprinkles<br />
<br />
<b>Directions</b><br />
1. Melt butter in a large saucepan over low heat and add marshmallows.<br />
2. Stir the marshmallows until they being to melt, and slowly add the dry cake mix one spoonful at a time until combined.<br />
3. Stir in cereal until it is completely coated with marshmallow mixture.<br />
4. Sprinkle half of the sprinkles into the mix and combine.<br />
5. Press into a lightly greased baking dish or cake pan and to with remaining sprinkles.<br />

Try it, you won't be dissappointed. Just add a vegetable and maybe some rolls, and you have a satisying Sunday dinner. </em><br />

4-6 boneless, skinless chicken breasts<br />
2 cups Minute Rice<br />
1 package Lipton Onion Soup Mix<br />
1 can of Cream of Chicken soup<br />
1 can of Cream of Celery soup<br />
1 can of water<br />
<br />
<strong><em>Instructions</em></strong><br />
1. Butter a casserole dish.<br />
2. Mix together the Cream of Chicken soup, the Cream of Celery soup, water, and white rice (uncooked).<br />
3. Pour mixture into the casserole dish.<br />
4. Lay chicken breasts on top.<br />
5. Sprinkle the onion soup mix on tip.<br />
6. Cover with aluminum foil.<br />
