Here I Go Again...

Remember back in February when I said I was "back in the saddle?"  That was a lie.  Who was I kidding?  Pregnant.  New job.  Need I say more? So now it's August.  Baby B is 3 months old.  I've returned to work, and it feels like a combination of I never left and I'm new all over again. But...I'm really proud of myself.  I planned our August menu before returning to work, and we (mostly) stuck to it.  See picture (isn't it so beautiful and organized?) Some of my closest friends are new moms either returning to work for the first time.  And, if I can help them, or you, with that transition just for one minute with this blog...I will do my best to keep adding to it. It has been almost a year since my last post.  At first I was embarrassed, but to be honest...2013 was tough.  March and April were busy, our home was burglarized in May, our son turned two and I had my first gallbladder attack the night before his birthday party in June, I had my gallbladder removed in August, we went on our first family vacation a few weeks later.  I had fully intended on jumping back into the blog-osphere in September, but then we found out we were pregnant with Baby #2, I was in the middle of a super intense time at work and...a really great company began recruiting me for a new job.   So now it is mid-February 2014.  I am 28 weeks pregnant, and I started my new job less than 30 days ago.  Am I insane?  Probably.  Is anyone surprised?  Probably not. Slow Cooker Cheesy Meatballs

Slow Cooker Cheesy  Meatballs  (adapted from allrecipes.com and www.iwashyoudry.com) Ingredients -1 pound ground beef -1/2 teaspoon sea salt -1 tablespoon onion powder -1/2 teaspoon garlic salt -1 1/2 teaspoons Italian seasoning -3/4 teaspoons dried oregano -3/4 teaspoon crushed red pepper flakes -1 1/2 tablespoons Worcestershire sauce -1/3 cup skim milk -1/4 cup grated parmeson cheese -1/2 cup bread crumbs -5 mozzarella sticks, cut into small pieces -1 jar (24 oz) pasta sauce Directions 1.  Combine ground beef, sea salt, onion powder, garlic salt, Italian seasoning, oregano, red pepper flakes, Worcestershire sauce, milk, parmeson cheese and bread crumbs in mixing bowl. 3.  Form into ping-pong sized meatballs. 4.  With your finger, make a hole in each ball.  Place one piece of cheese in each hole and then pinch the hole back together. 5.  Place meatballs in your slow cooker. 6.  Cover with pasta sauce. 7.  Cook on low for 4-6 hours...

Momma Aimone's Craft Club Menu

I am sure there are a few of you out there wondering, why craft club.  Well, it is no secret that I love to craft, I love my girlfriends,  and I love wine...hence craft club.  We tried book club, but no one read the book and it just turned into a wine drinking, gossip fest (which I was A-OK with) but ever since having my Sweet Boy, I feel like I have to be constantly "doing" something.  So, craft club was born.  All the same benefits of book club, but you leave with a finished product.  GENIUS.  Each lady takes turn hosting once a year and is responsible for the craft, food and beverages.  I highly suggest replicating, and doubling, this menu for your next ladies only function! Weekly Menu: 2/11/13 - 2/17/13

Update from last week:  We tried a few new recipes last week.  I'll be adding the Beef and Broccoli, Ranch House Pork Chops and Chicken Cordon Bleu to the recipe rotation.  They are that good.    I had to do a little re-arranging since I defrosted three pounds of hamburger meat on Saturday and need to use it ASAP.  So we had tacos on 2/10 instead of the pot roast I had planned.  Oh well, we'll have it this week!   I hope you find some inspiration this week from Momma Aimone's kitchen. Monday Meatballs Pasta and Pasta Sauce Garlic Bread This meatball recipe is my go-to whenever I have some extra hamburger meat lying around. Slow Cooker Chicken Cordon Bleu

I was skeptical about this recipe, but with a few tweaks...it was awesome.  Definitely going into our rotation. Slow Cooker Chicken Cordon Bleu Adapted from www.chef-in-training.com Ingredients --3 or 4 skinless, boneless chicken breasts --2 cans condensed cream of chicken soup --2 cups milk --4 ounces sliced ham (8 ounces if you really like ham) --8 ounces sliced Swiss Cheese --8 ounce package herbed dry bread stuffing mix --1 stick butter, melted Directions 1.   Mix together the cream of chicken soup and milk in a small bowl.  2.  Pour enough of the soup into a slow cooker to cover the bottom. 3.  Layer chicken breasts over the sauce. 4.  Cover the chicken with slices of ham and then Swiss cheese. 5.  Pour the remaining soup over the layers, stirring a little to distribute between layers. 6.  Sprinkle the stuffing on top, and drizzle butter over stuffing. 7.  Cover, and cook on low for 8 hours.

Ranch House Slow Cooker Pork Chops

We love pork chops, but it is hard to find new/different recipes for pork chops in the slow cooker.  I saw this and my interest was peaked.  My husband is not a big fan of ranch dressing, but dressing seasoning is different than the actual dressing...so I gave it a try.  These were awesome.  So full of flavor and tender.  Make sure you buy a thicker cut of pork chop, definitely not the thin cut.  Enjoy!
