Sheet Pan Chicken Fajitas

 Chicken Fajitas are a favorite food with Team Aimone - we've been making these Oven Baked Fajitas for years! I stumbled upon this recipe awhile back, and it quickly became a staple in my weekly meal planning. We all know how much Momma Aimone loves a good sheet pan recipe, mainly because there is so little clean up after - and this one does not disappoint. I hope you enjoy!


Sheet Pan Fajitas

Serves 8


Ingredients

2 lbs boneless, skinless chicken breasts or tenders (sliced into strips)

1 each red, orange, and yellow peppers (sliced into strips)

1 red onion (sliced into strips)

2 cloves garlic (minced)

3 Tbsp olive oil

2 tsp chili powder

1 1/2 tsp cumin

1 tsp paprika

1/2 tsp coriander

Salt and pepper to taste


Directions

1. Preheat oven to 400 degrees.

2. Spray a large baking sheet with non-stick cooking spray.

3. Spread chicken, peppers, and onion on the baking sheet. 

4. Sprinkle garlic, chili powder, cumin, paprika, coriander, salt and pepper over.

5. Drizzle olive oil over.

6. Mix everything together and spread into an even layer. 

7. Cook in preheated oven for 20-25 minutes (toss halfway through), until chicken is cooked through.


Serving Suggestions

Serve in flour tortillas with sour cream, guacamole, and Mexican cheese blend.

Stocking Your Freezer: Pork Chop Marinades and Rubs

Pork Chops were on sale last week at Giant.  We love pork chops!  And you can do the same thing with pork chops you do with chicken - freeze it in a marinade or rub.  Below are a few recipes for my favorite marinades/rubs to help you stock your freezer.  Then, when you are running short on time in the morning, just pull out of the freezer, defrost while you are work and throw in the oven at 350 degrees for 45-60 mins.  Voila!
