-2.5 lbs boneless bottom round roast
-1/2 teaspoon black pepper
-1/4 teaspoon salt
-2 large onions (sliced)
-1 3/4 cups water or beef broth
-1 1/2 tablespoons balsamic or red-wine vinegar
-1 envelope dry onion soup mix
-1 tsp dried thyme
-1 3/4 lbs red potatoes (quartered)
-1 pound baby carrots
1. Sprinkle the roast with pepper and salt; add to the slow cooker.
2. Add the onions, carrots and potatoes.
3. Mix together the remaining ingredients and add to the slow cooker.
4. Cook on low for 8-10 hours.
