This is my last post before Christmas.  It is hard for me to believe that Christmas is just around the corner.  Where did this year go?  I don't know about you, but after the senseless killings in Connecticut last week, I am actually going to take the time to enjoy this holiday season.  I am going to soak in every minute I get to spend with family and friends.  I am going to watch White Christmas, It's a Wonderful Life, Christmas Vacation and How the Grinch Stole Christmas as many times as I can.  I am not going to worry if my presents are perfectly wrapped, or if everything goes according to plan.   If we have learned anything this year, life is too short and too precious to waste one minute of it.  So, I am going to tell my family I love them, spend some quality time with my husband and snuggle my lil' boy every chance I get.

Stocking Your Freezer: Pork Chop Marinades and Rubs

Pork Chops were on sale last week at Giant.  We love pork chops!  And you can do the same thing with pork chops you do with chicken - freeze it in a marinade or rub.  Below are a few recipes for my favorite marinades/rubs to help you stock your freezer.  Then, when you are running short on time in the morning, just pull out of the freezer, defrost while you are work and throw in the oven at 350 degrees for 45-60 mins.  Voila! Marinated Pork Chops  (from allrecipes.com) Ingredients 3 pork chops 1 tablespoon soy sauce 1 tablespoon Worcestershire sauce 1 teaspoon lemon juice 2 tablespoons brown sugar 2 tablespoons ketchup Directions --In a small bowl combine soy sauce, Worcestershire sauce, lemon juice, brown sugar and ketchup. --Place pork chops in a Ziploc freezer bag and pour sauce into bag. --Zip, label and freeze. Slow Cooker Buffalo Chicken Sandwiches  (from allrecipes.com) Ingredients 4 skinless, boneless chicken breasts 1 bottle buffalo wing sauce (17.5 ounces) 2 tablespoons blue cheese or ranch dressing 2 tablespoons butter Directions --Place chicken breasts in slow cooker. --Pour buffalo wing sauce over chicken. -- Add dressing and butter. --Cook on low for 8-10 hours. --Shred chicken with two forks before serving. Serving Suggestions Serve on top of hoagie rolls with a few celery sticks and your favorite potato chips or roast some potato wedges for homemade fries.
